Cheese Puffs



Need an appetizer on short notice?

Here's my go-recipe for a savory snack. It calls for basic ingredients that I always have on hand, so it's perfect for last minute plans when I don't have time to run out for specialty ingredients.

Cheese Puffs
  • 1/2 C. butter
  • 1 C. water
  • 1 C. flour
  • 1/2 tsp. dry mustard
  • 1 T. chopped chives
  • 4 eggs
  • 1 C. shredded cheese
Preheat oven to 375*. Grease cookie sheet. In 2 qt. saucepan over Med-High heat, melt butter and add water, stirring until mix boils. Remove heat and stir in flour all at once. Stir until smooth dough forms. Add dry mustard and chives. Once dough has slightly cooled enough to not cook the eggs, add the eggs, one at a time, stirring well after each addition until the dough is smooth. Add cheese into the batter and mix well. Drop dough onto cookie sheet in small balls, 2 inches apart. Bake at 375* for 30 minutes, or until golden. Turn off heat and leave in over for 15 minutes. (makes 20-24)


p.s. If you want to seem all fancy pants, you can call them Gougeres and tell people they are made from a Pate a Choux dough. And if you really want to BE fancy pants, try Martha's version.
