We welcomed fall with pumpkin-chip cookies.
They are by far, my husbands favorite cookie. He's been eying the treasured can of pumpkin for weeks (are you finding pumpkin hard to come by in your area of the country too?) He's being really good and trying not to eat as many sweets. And he also gets up way before I do each morning to work out. So, I tried to be good too and not keep a ton of temptation around here for him. While most of these tasty treats made their way to church to be devoured by the elementary kids, a few found their way into our cookie jar. And eventually our tummies.
They are all gone.
They did not last long.
Autumn, however, appears to be here to stay.
Pumpkin Chip Cookies:
Bake at 375 for 13 minutes. Cool on wire racks. Celebrate Fall.

- 2 T. milk
- 2 tsp. baking soda
- 1 can (14.5 oz.) pumpkin
- 2 C. granulated sugar
- 1 C. vegetable oil
- 4 C. flour
- 4 tsp. baking powder
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. vanilla extract
- 2 C. chocolate chips.
Bake at 375 for 13 minutes. Cool on wire racks. Celebrate Fall.
